Recipes Series: Smoked Mackerel Chip Dip

    • Place 3 tblspns bacon fat on medium heat.

    • Once hot add 1 cup chopped yellow onion, 1/4 cup chopped red bellpeppers, 2 tblspns minced garlic and 4 chopped green onions sauteing until onions are clear.

    • Then add the 3 tblspns of parsley, 1/2 tsp. cayenne, 2 tsp onion powder, 2 tsp tarragon, 2 tblspns lemon juice and last but not least 2 1/2 tblspns dijon mustard.

    • Allow to cook about 3 more minutes before cooling.

    • In a separate bowl mix 1 cup Italian bread crumbs, 3 tblspn Italian dressing, 1/2 cup grated cheese mixing well and set it aside.

    • Gently fold 8 ozs of cream cheese, 1 lbs. smoked mackerel into the mix that has been cooling.

    • Mix well and spread into baking dish.

    • Top with the bread crumb mixture. Bake at 400 until warmed through and browned on top.

This one makes an incredible chip dip for that next big fish fry!
